Today, Sunday, my favorite day of the week, I recruited the help of my stay or go! Yesterday I had to go grocery shopping and as I was walking by the meat counter, like I always do, I saw a pork tenderloin that caught my eye with a big sign that said $4.99! I am sadly going to reveal how much I don't ever buy meat...it took me a few seconds to realize why the sticker on my wrapped up hunk of meat was more than $4.99. Clearly I bought 1.32 lbs of it. Duh. So I was already intimidated.
It cooked in here for about 4 hours wrapped in bacon and accompanied with a packet of french onion soup, about a cup of water, salt, pepper, and garlic powder. After 4 hours I took it out and pan seared it (is that what you call it?) super fast to crisp up the bacon. I was inspired by the first link you get after googling "cooking a pork tenderloin in a crock pot" and it was by far more than amazing. I couldn't even slice it without it falling to pieces.
I didn't take one bite without both a carrot and a hunk of meat on my fork. The combination of the sweet carrot and the pork was great. A serving size of this is 7 slices right? How many people is a 1.32 lb. pork tenderloin supposed to feed? I guess if you ever come over for this stuff I will have at least 2 cookin'.
A million dollars are held in this crock pot. The juice that results could be bottled and sold. The leftovers of the french onion soup mix are soooooo good drizzled over the pork. Except when you burn your hand on the side of the crock pot as you keep scooping more and more out. I have half of it left over for lunch tomorrow.
Maybe I should buy meat more often..I am a passionate carnivore after all.
I also made tuna salad this weekend but we are not going to talk about that. I am ashamed that the huge batch I made didn't even last 24 hours and I am also not going to admit how early I had my first bowl this morning. Let's just say there are some things I should NOT make for lack of self control.
